For the simple reason that artists, theoretically, have to deal more with human forms than others. It is a kind of two hits with one shot. Not only you learn how to correctly draw a human body, but you also learn about proportions, forms and variations. Once these techniques are mastered, they can be applied to any other kind of drawing quite easily.
